Zack admires Rosalind in a lot of ways. At first, he thought that she wouldn't have any interest in him or would want to speak with him since she's cultured and eloquent. In the beginning, he's had the worst luck with women, which is part of his charm, but the more he got to know her the more he became very aware how much they are alike.
He did have his doubts that she would snub him later or possibly make fun of him but laughing with him even through his faults solved that problem. He discovered a lot about himself and about her through all of their interactions. He enjoys her poetic way of speaking and he's careful not to break his promises. After all, what good is a friend if they don't follow through with what they say?
She has taught him a lot and he's willing to try to reopen the shop which is something that he's putting a lot of effort into. It's his and Aerith's dream to "fill Midgar with flowers" and he'll continue to do that here in Ruby City. Her patience reminds him of Angeal, her stubbornness reminds him of Aerith and he won't forget her because Rosalind's wisdom reinforces that forgetting means losing the love of that someone even though he's moving forward.
He respects Rosalind greatly and won't do anything to betray that trust. If she says jump, he'll ask how high and when he can come down. It's the same with Aerith. He's a little slow to step in on the boyfriend circle simply because he's not sure if she wants him in that way. They only just begun to learn about each other. The fact that she had offered him a cot and not her bed really hits home for him because there is that boundary established and he's very keen to pick up on that.
Teaching him to cook has been a godsend and a step toward his own independence which is something he didn't think he really needed. Sure, he could keep going back to her for meals but he really wants to do things on his own to show that he doesn't need someone to help him with the basics every time. This also solidifies that she's a great friend to have.
In the discovery of her past, he finds her even that much more intriguing that she isn't the type to go around and brag that she's the daughter of a god and much older than he is. He doesn't care. He likes her for who she is and what she has taught him and that says a lot.

Rosalind was always supposed to be the old dame who's been around the block enough times to know what is best to do with just about everyone. She can tell that Zack is this man who has had his share of troubles and her instinct is to try and impart some wisdom on him that she's picked up over her life. Down on his luck man who hasn't always had the best luck with women? Men like that have wandered into her life more than once, and she quite likes how kind he is.
She'd be kind of surprised to hear how loyal he's already become to her. While she's used to leading men and women, it's been a few decades since she last had real command over anyone. It's flattering, though, to have that kind of trust from anyone.
That level of respect he has for her boundaries and his interpretation of how she presents them is one of his most charming features in Rosalind's eyes. Her culture is built around physical and emotional closeness, so she's used to touching people and treating them with a sweetness that might come across as too personal depending on how the recipient was raised.
The cot in particular is actually her way of saying that she's willing to sleep on the floor to keep him comfortable, as it's the only real bedding she has for herself at the Owl and Hound. She's pulled all-nighters there for projects, commissions, and just because she wants to fall asleep smelling the embers from the forge, and she considers welcoming Zack to sleep in the Owl and Hound as a sign of trust. More than a few sharpened weapons grace the walls, even at night, and she's willing to let him into that inner sanctum kind of place where he's in her personal armory.
Letting people know about her past is something she's only started doing recently because it makes her feel more comfortable when the people she likes and trust understand the whole truth about her. There are those whom she will likely never tell about every little thing, and Zack is one of those people she'd be willing to tell the whole truth about her first love and why she ended up immortal on the condition of certain acts. Even Alice doesn't know what that promise is.
As for the possibility of romance... Well, she's given her heart to people before. Dated more than a few men and women who came from the life of battles and bloodshed. She's certainly not not attracted to Zack, which she's quite content with. He's got a handsome face, a kind personality, and he picks up so much without needing much instruction in the matter. What really keeps her from trying to pursue him is that he is still coming back from the sadness left behind by Aerith going home, and she herself has had bad luck with men in the city. The first left before they could get started, the second was sent home after he had started coming on to her quite strongly, and the third she had certain physical relations with before he went home as well. She'd love for this to work as a friendship and maybe more, but it'll take her some to time to feel like they're both ready for that kind of step.
