It's been a while, we've had some people leave, some new people join and some people making triumphant returns, so it's about time for another one of these nifty things. Here's how it goes:

1 whole medium chicken breast (skinned and deboned)
2 thin slices boiled ham
2 thin slices Swiss cheese
Dried sage, crushed
2 Tbsp. fine dry bread crumbs
2 tsp. grated Parmesan cheese
2 tsp. snipped parsley
2 Tbsp. butter or margarine, melted

Halve the chicken lengthwise. Place one piece of chicken between two pieces of clear plastic wrap. Working from center to the edges, pound lightly with a meat mallet (I use a soup can :P), forming rectangle about 1/8 inch thick. Remove plastic wrap. Repeat with remaining chicken. Place a ham slice and a cheese slice on each cutlet, trimming to fit within 1/4 inch of edges. Sprinkle lightly with sage. Fold in sides, roll up jelly roll style, pressing to seal. Combine bread crumbs, Parmesan cheese, and parsley. Dip chicken in butter, then roll in crumbs. Repeat with other half. Bake in a shallow baking pan at 350 degrees for 40-45 minutes. Remove to a serving platter. Stir mixture remaining in pan, if any, till smooth; spoon over chicken. Serves 2.
